Nordic Umami Company, a Finnish food technology startup, has unveiled new tech to extract umami flavour from plant-based food.
The company aims to become the leading supplier of vegan umami by scaling its fermentation-based technology into an industrial-sized pilot plant.
The three items in this product portfolio are salts, sauces, and bouillons.
With the goal of making vegan food more delicious as well as upcycling food that would otherwise go to waste, the company produces all-natural umami from circular ingredients.
Reetta Kivelä, the co-founder of Nordic Umami, found the original idea for natural umami through a real-life problem.
“We realised that the options for bringing umami to plant foods were limited,” said Reetta.
“All alternatives had health, naturality, or sustainability challenges. However, vegan food must also have the fifth basic flavour, umami.”
The firm secured €1.8 million in a seed fundraising round conducted by the Nordic Food Tech VC last December.
